I've gotten a number of recipe ideas from the list of Acid Reflux Recipes at Gluten Free / Dairy Free NJ. While this site isn't about GERD or Acid Reflux, the list details the steps that can be taken to modify most of the recipes on the site to make them suitable for those suffering from Acid Reflux or related conditions.

Most of these are pretty obvious omissions / substitutions: leave the onions out of the gluten free meatballs and bake them instead of frying for example. The real stand out however, is the tomato free sauce for spaghetti / pasta / whatever. This sauce is made primarily from sweet potatoes, carrots, and beets (omit the garlic / onions as needed). I made a batch of this last night and if you use enough basil it tastes pretty good. Definitely better than being up all night in pain!

There is also a list of no tomato recipes on the site including no tomato chili and no tomato salsa but both of these rely on other foods we should avoid (ground beef, raw onions, black pepper, etc). There is however a no tomato jambalaya recipe that looks pretty good as well (assuming I can find a low fat Andoulle sausage).
